Spent a number of hours today recreating Shannon’s Warm Chocolate Mousse as the finishing touches to our New Years Eve Dinner.
Madeleines fresh from the oven and a bowl of Orange Pearls
Piping in the mousse, topping with sable crumble, then the orange pearls.
Finish with a tempered chocolate disc, grated tonka beans and a warm chocolate sauce.
