A “purist” Ramen Bar in Salcedo Village, Makati. Only half a dozen or so choices all served at a communal “table” that completely surrounds the open kitchen that is spotlessly clean.
Seating for only 25 ar a stretch, the business relying on high turnover. I was waiting only around 5 minutes for my Gyoza and the Shoyu Ramen. Piles of napkins for the messy eating that can occur with these noodles (and bibs available if you really want to go to town with the slurping)
Shoyu Ramen – Pork, Bamboo Shoots, Black Fungus, Spring Onion (Chives??) Sesame Seed and Black Garlic Oil. The broth was steaming hot and full of flavour, with the noodles just cooked with lots of bite. Delicious.
